Pilot chiming in. Make sure you stay away from these clouds, as they will fuck you up. Essentially, what is going on is strong winds are encountering a mountain, and are being forced up. As the air rises, it expands and cools, some of which condenses into a cloud; the air then falls, contracts, and warms up, all while moving at high speed.
