Question is, can I somehow “clone” my old SSD files and booting configuration over to my new m.2 ssd, so that I don’t have to download windows again / download all my files that were placed on my C: drive?

When I start the PC with all drives connected, the BIOS only recognizes the M.2 SSD (which does not have any O.S.). But when I unplug the M.2 SSD then restart, the BIOS recognized my SATA SSD which has my O.S. and then I can boot up into Windows 10 fine.

If you're using a mechanical HDD now, an SSD will be a giant leap forward, regardless of whether you're using SATA 2 or SATA 3.
